“Dad is still here, it’s just in a different way,” she said during an interview in April 2023, only to be arrested a month later and charged with murdering the very man she had publicly mourned.
The 35-year-old mother is now on trial for the death of her husband of nine years and has pleaded not guilty to charges including aggravated murder, attempted aggravated murder, insurance fraud and forgery.
If convicted of the most serious count, she could face life imprisonment. She also faces separate financial charges in another case and has yet to enter a plea in that matter.

Night that changed everything
Eric Richins, 39, was found dead in the early hours of March 4 2022, with court documents showing that his wife had taken cocktails up to their bedroom that evening to celebrate success in her real estate business.
The widow later told investigators that one of their sons was having nightmares, so she slept in the child’s room at around 9.30 pm.
When she returned to the master bedroom roughly six hours later, she told police she found her husband unresponsive.

“I turned over, like to put my arm around Eric, and he was just cold,” she said in an interview with investigators. “Like it was like a, like putting your arm over a cement brick.”
She called emergency services at 3.21 am. First responders noted that Eric appeared to have been “dead a while”, according to charging documents.
Allegations of a plot
Prosecutors, however, allege that forensic analysis of her mobile phone indicates it was unlocked six times in the 15 minutes preceding the emergency call.
An autopsy later determined that Eric Richins died after ingesting approximately five times the lethal amount of fentanyl.
Investigators say the weeks leading up to Eric’s death were marked by suspicious events as Kouri asked a woman who cleaned her properties to obtain fentanyl for her.

The woman told police she purchased more than 15 pills from a dealer and handed them over. On Valentine’s Day, Kouri left her husband a sandwich and a note before going out to meet a man described by prosecutors as her “paramour”.
Later that day, Eric reportedly texted his wife saying he felt unwell and might go to the hospital if he did not improve. He told two friends he believed he had been poisoned after eating the sandwich.
“I think my wife tried to poison me,” he told one.

Digital footprints
Kouri’s legal team argued that Eric believed he was experiencing an allergic reaction and that there is no evidence he ingested drugs on Valentine’s Day.
Prosecutors further allege that later in February, the suspect requested more fentanyl, claiming the previous drugs were not strong enough.

Phone records show contact between her and the woman around the time of another alleged purchase. Within a week, Eric was dead.
After her husband’s death, Kouri deleted more than 800 text messages exchanged with the woman between January and mid-March 2022, along with a “significant amount” of other mobile phone data.
Court documents also allege that, after learning the cause of death, she searched online for information about women’s prisons in Utah, life insurance payments and how police recover deleted data.
Her internet history allegedly included a search asking what would appear on a death certificate “if someone is poisoned.

At the heart of the case are three young boys who, in the months after their father’s death, were told through a storybook that he was still with them “in a different way”.
